Do-Ahead Mashed Potatoes

Do-Ahead Mashed Potatoes

This is a modified version of two recipes from www.cooks.com. This is a great recipe for busy cooks who have large dinners to prepare.

Ingredients

6 lbs. potatoes, peeled, cooked, drained and mashes

1 cup sour cream

6 oz. cream cheese

5 tbsp. butter

1/2 cup milk

salt and pepper to taste

Directions

Mix in the last 6 ingredients. Transfer to buttered dish. Let cool and refrigerate. May be made a week ahead of time. When ready to serve, dot with 2 tablespoons of butter, grated cheese and paprika. Bake in 350 degree oven for 25-30 minutes (uncovered).
